Bacon Mac Cheese Pot

Ingredients

  • 250g macaroni pasta
  • 50g butter
  • 6 rashers bacon, diced
  • 1 onion, finely diced
  • 1 clove garlic, crushed
  • 2 tablespoons flour
  • 2½ cups milk
  • 250g COON Tasty Cheese, grated
  • 2 teaspoons hot English mustard
  • salt and black pepper, to taste
  • 6 large slices tomato
  • ½ cup breadcrumbs

Method

  1. Boil macaroni in a large pot of boiling salted water until al dente. Drain.
  2. Melt butter and sauté bacon until crisp.
  3. Add onion and garlic and sauté until softened.
  4. Mix in flour and stir for 1 minute.
  5. Add milk and cook, stirring until thickened.
  6. Stir in half the COON Tasty Cheese and the mustard until melted and season to taste.
  7. Mix in macaroni and portion into 6 x 1 cup ovenproof dishes.
  8. Top each with a slice of tomato.
  9. Combine remaining COON Tasty Cheese with breadcrumbs and sprinkle on top.
  10. Bake at 200°C for 15-20 minutes until golden brown
